These puff pastry egg bites are a great way to start the day! With eggs, bacon, and goat cheese this pastry bite is so cute and delicious making it a great option for breakfast, brunch, or an appetizer buffet.
These easy mini puff pastry egg cups are a great addition to any table. They are perfect for brunch (Mother's Day, Easter, Christmas), appetizer buffets (baby showers, birthday parties, anniversary celebrations), and on-the-go breakfast (make ahead and reheat).

Basic Steps for Puff Pastry Egg Bites
- Bacon. Cook some bacon until crispy. This can be done in strips and then crumbled or cut into pieces before cooking. We love using leftover bacon for this recipe to save time.
- Frozen puff pastry. Let the puff pastry sheets thaw (per package directions), roll the dough, and cut into pieces. Fit each puff pastry square into a mini muffin tin. You want the pastry to sit above the sides of the mini muffin tin to keep the egg mixture inside.
- Eggs. Whisk the eggs with some salt and pepper. NOTE: We do this in a container that we can pour from.
- Assemble. In each pastry cup place some goat cheese crumbles followed by crumbled bacon. Top each pastry cup with the scrambled egg mixture.
- Bake and serve.
Puff Pastry
To achieve a better balance between pastry and filling, we roll out the puff pastry so it is a little thinner. This helps in a few ways:
- Ensures when you take a bite you taste the egg, bacon, and cheese and not just flaky pastry. We love flaky pastry but want a balanced bite!
- Thinner pastry makes it easier for the pastry to cook all the way through. Even with a hot oven (which puff pastry wants in order to 'puff up'), if the pastry is thick it will take longer to cook through.
- Allows the filling and pastry be done at the same time. Since these are a mini bite (meaning there is not a lot of filling in each cup) the filling may be done before a thicker puff pastry shell has time to cook through.
Equipment We Used
We used a rolling pin to roll the puff pastry dough thinner for a more balanced mini puff pastry bite.
A sharp knife and ruler straight edge was used to cut the pastry into pieces. If you have a 5 wheel pastry cutter it would work GREAT here! It helps ensure each pastry piece is the same size.
We made these as a mini bite in mini muffin tins because we love small bites! However, these are just as good in a full size muffin pan. You will need to adjust the size of the puff pastry squares and make sure you cook them until the filling is cooked through and the pastry is done.
Make Ahead Tips
Cook the bacon in advance and store in an airtight container in the fridge until ready to use. We love using leftover bacon to save time.
Bake these mini puff pastry egg bites up to 3 days in advance. Store in an airtight container in the fridge. When ready to serve, place egg bites on a sheet pan and heat in a 300°F oven until warm, 5-10 minutes. PRO TIP: If they start turning brown before they are warmed, loosely cover them with a piece of foil and continue heating.
The puff pastry cups can be rolled, formed, and frozen before baking. This saves a little time when assembling these bites. Once in mini muffin cups, place unbaked dough in the freezer until frozen, remove from the tin and store in an airtight container in the freezer up to 3 months. When ready to assemble, remove from the freezer and place back in the mini muffin tins. Let the pastry thaw for 10-15 minutes, fill with egg, bacon, and cheese filling. Bake until golden brown and enjoy.

This is a great starting point for a delicious breakfast, brunch, or appetizer bite.
- Substitute breakfast sausage or crispy prosciutto for the bacon.
- Make them vegetarian by leaving out the bacon.
- Add extra veggies to the cups with the cheese; sautéed mushrooms, fresh spinach, chopped kale, diced red peppers, broccoli, onions or shallots.
- Include some herbs (fresh or dried) in the egg mixture; thyme, rosemary, or basil.
- Use your favorite cheese. Instead of goat cheese try shredded cheddar cheese (white or yellow), crumbled feta, or shredded gruyere.

Saving Leftovers
The FDA recommends discarding any perishable food that has been out at room temperature for more than 2 hours.
If you are within the FDA recommendations these bites save great. Place in an airtight container in the fridge for up to 3 days. Reheat on a baking sheet in a 300°F oven until warm.

NO! Fill these pastry cups and then bake them.
If the pastry is in sheets you will need to thaw it before unfolding and rolling it out so it doesn't break into pieces. If you already made the puff pastry into the 'mini cups' and then froze them (before baking), you can remove them from the freezer and place in the muffin tins before mixing the filling. By the time you mix the filling and fill the tins they should be good to go straight into the pre-heated oven.
This is usually due to either having the pastry too thick or cooking at too low of a temperature. You want a hot oven so the pastry 'puffs up' and also cooks. If the pastry is too thick, and pressed into a mini muffin tin, it will take longer to cook through.

Ingredients
- 9 strips bacon (½ cup chopped, crispy bacon)
- 2 sheets frozen puff pastry, thawed
- 3 ounces goat cheese, crumbled
- 5 eggs
- Salt and pepper to taste

Instructions
Cook Bacon
- Cook the bacon using your preferred method. We will crumble the bacon before using so you can cook this in strips and then crumble or dice and then cook. (We diced our bacon and cooked in a 425°F oven for about 15 minutes.)
- Once crispy, let bacon cool enough to handle and crumble if necessary. NOTE: This can be made in advance and stored in an airtight container in the fridge or freezer to save time with assembly.
Assemble Egg Bites
- Preheat oven to 400°F.
- Place 1 sheet of thawed puff pastry on a cutting board. Use a rolling pin to roll the puff pastry until you have a 12 x 12 square.
- Use a sharp knife, pizza wheel, or 5 wheel pastry cutter to cut the puff pastry into 12 equal rectangles. Repeat with other puff pastry sheet.
- Give the muffin tin a quick spray of non-stick cooking spray or a light brush of oil. While this step is not absolutely necessary we found it helped the egg bites release from the muffin tin easier.
- Gently press one square of pastry into each mini muffin tin. The corners will stick up a little which is fine.
- Divide the crumbled goat cheese and chopped bacon among all the cups.
- Whisk the eggs, salt, and pepper together.
- Divide the egg mixture between all the mini muffin puff pastry cups.
- Place in a 400°F oven for 10-15 minutes or until puff pastry is golden brown and eggs are firm.
- Serve hot.
