Description
This puff pastry egg bite is a great way to start the day! They are also delicious as appetizers for any event.
Ingredients
- 9 strips bacon (1/2 cup chopped, crispy bacon)
- 2 sheets frozen puff pastry, thawed
- 3 ounces goat cheese, crumbled
- 5 eggs
- Salt and pepper to taste
- Cooking spray
- Chopped parsley to garnish (OPTIONAL)
Instructions
Cook Bacon
- Cook the bacon using your preferred method. We will crumble the bacon before using so you can cook this in strips and then crumble or dice and then cook. (We diced our bacon and cooked in a 425°F oven for about 15 minutes.)
- Once crispy, let bacon cool enough to handle and crumble if necessary. NOTE: This can be made in advance and stored in an airtight container in the fridge or freezer to save time with assembly.
Assemble Egg Bites
- Preheat oven to 400°F.
- Place 1 sheet of thawed puff pastry on a cutting board. Use a rolling pin to roll the puff pastry until you have a 12 x 12 square.
- Use a sharp knife, pizza wheel, or 5 wheel pastry cutter to cut the puff pastry into 12 equal rectangles. Repeat with other puff pastry sheet.
- Give the muffin tin a quick spray of non-stick cooking spray or a light brush of oil. While this step is not absolutely necessary we found it helped the egg bites release from the muffin tin easier.
- Gently press one square of pastry into each mini muffin tin. The corners will stick up a little which is fine.
- Divide the crumbled goat cheese and chopped bacon among all the cups.
- Whisk the eggs, salt, and pepper together.
- Divide the egg mixture between all the mini muffin puff pastry cups.
- Place in a 400°F oven for 10-15 minutes or until puff pastry is golden brown and eggs are firm.
- Serve hot.
Notes
Favorite Riffs. Substitute breakfast sausage or crispy prosciutto for the bacon. Use your favorite cheese (cheddar, feta, gruyere) instead of goat cheese. Add some sautéed mushrooms, fresh spinach, diced red peppers, broccoli, onions, or shallots. Include some fresh or dried herbs in the egg mixture.
Make these vegetarian by leaving out the bacon.
Make ahead tips. Use leftover bacon or make it ahead of time and store in an airtight container in the fridge until ready to assemble. Bake egg bites and store in an airtight container in the fridge until ready to serve. Reheat in a 300°F oven until warm, about 5-10 minutes.
