Watermelon Feta Skewers

Description

The sweet melon combined with the salty feta is a summer party in every bite!


Ingredients

Scale
  • 1 seedless watermelon (we love the mini melons for this)
  • 12 ounce block feta cheese (not crumbled)
  • Fresh mint leaves
  • Picks

Instructions

  1. Remove the rind of the watermelon
  2. Cut the watermelon into small squares 1/2 - 3/4 inch. You want these to be a small bite size. You will have watermelon left over. Set aside. Note: Use a melon baller for round pieces of melon.  
  3. Cut the block of feta cheese into 1/2 - 3/4 inch squares. You want these pieces the same size as your watermelon pieces. Set aside
  4. Place a mint leaf onto a pick.
  5. Place the pick through the middle of the melon piece.
  6. Place the pick through the middle of the feta piece but don’t go all the way through the feta. You want the feta square to sit flat on your platter.
  7. Place the melon bite on the serving platter.
  8. Serve.

Notes

Use Block Feta. We like feta in liquid since the feta cheese can be drier when not stored in the liquid. Most grocery stores will carry this in the deli section. We like to have an extra block of feta on hand in case some breaks when cutting or skewing. PLUS, feta is great on almost everything!

We use personnal-sized (mini) seedless watermelons. Remove the rind, cut into slices (about 3/4 inch thick), cut the slices into strips, and cut the strips into approximately 3/4 inch cubes. Use a melon baller to  make round pieces  #cute! NOTE: We cut 64 pieces of watermelon from one mini melon.

Order of assembly. Have fun with this! Make them all the same or different. Melon, mint, feta. Mint, melon, feta. Mint, feta, melon, feta. It all works! We like to keep them to one bite so guests get all the flavors together in each bite.
